Kitchens
The working station: ranges, salamanders, the pass, walk-ins, sauté stations, brigade whites and side towels. No free photograph exists of any kitchen he actually worked in, so this is built from other professional kitchens and the Culinary Institute of America, where he graduated in 1978. It is the twenty-eight years the television skipped over.
